Vital Wheat Gluten, from wheat protein, is known as the Natural Nemesis of Gluten Free. The wheat flour is hydrated to activate the gluten, then processed to remove everything but the gluten, which is dried and ground back into a powder. This product can be used to make seitan; it can also be added to regular flour for a high-gluten flour, which will result in chewier breads.
