Makes 12 – One packet of mix makes two batches of 12. Double the ingredients for one large batch of 24!

Ingredients:

  • 1 ¼  cup TH Cookie Mix
  • 4 Tbs softened or melted butter (for dairy-free use 4 Tbs coconut oil and a pinch of salt)
  • 1 Egg
  • Desired amount of plan-approved additions like chocolate chips or nuts (optional)
  • Vanilla or other extracts (optional)
    NOTE: This mix is gently sweetened. You may want to add extra sweetener (to taste) if you prefer a sweeter cookie.

Directions:

  1. Whisk together butter (or coconut oil and a pinch of salt for DF), and eggs with optional extracts.
  2. Add cookie mix and blend well. Stir in desired plan-approved additions.
  3. Drop by rounded tablespoons onto a parchment-lined cooking sheet or silicone cookie mat and roll the dough into small balls. Flatten slightly with your hand or small piece of parchment paper.
  4. Bake at 350 degrees for 8-12 minutes.
